Day 3: Vacillating on Veganism

8:00 am - Hump day so real. Ann texted me last night asking if I wanted to go to the gym at 7am. Realistic answer: I will still be dead to the world at this hour so no, but I greatly admire your willpower. Veganism has not yet improved energy levels.

8:30 am - Banana and cashew butter. I feel like I'm not exploring the depths of veganism as much as I should be. Instagram is filled with beautiful posts of great vegan breakfasts like avocado toast and hempseed oatmeal. Three days in and I'm still stuck on the banana thing. What can I say - I'm a creature of habit! And inherently lazy.

10:30 am - Almond milk coffee from the 'bux god bless. I have a feeling this vegan thing, while sustainable for the earth, is unsustainable for me as a person. I just keep spending more money than usual! My number one fan/sole reader of this blog, Cam, has always maintained that I should stop buying expensive coffee every morning and instead just venmo myself $2. That way I'll save money for buying something actually legit (like a TUMI backpack!! I'm obsessed!!) instead of fueling a caffeine addiction. She always has such creative solutions that I lack the willpower to follow through with!*

2:00 pm - Grapes before hitting the gym! On second thought, this vegan thing might actually SAVE me money! Fruit and veggies are less expensive than granola bars!

5:00 pm - Reunion with my honors group! They had mini chicken, beef, and cheese empanadas - NONE of which are vegan. :( Abstained from consumption.

8:00 pm - Sauteed kale with cooked kidney beans, quinoa, and bell pepper!
